Low Calorie Vanilla Cupcakes

With a huge sweet tooth, I’m always on the lookout for low-calorie or low-fat desserts that are substantial enough to satisfy my sweet craving, but still be a healthier alternative. The low-calorie cupcakes featured on the show, The Biggest Loser, were said to be only 100 calorie cupcakes.

INGREDIENTS

  • Classic White Cake Mix
  • 3 organic egg whites
  • 1/4 cup of non fat plain Greek Yogurt
  • 1 cup of water

INSTRUCTIONS

  • Preheat oven to 350°F for metal or glass pans, 325°F for dark or coated pans.
  • Blend cake mix, water, yogurt, and egg whites in a large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes. Pour batter in pans and bake immediately.
  • For cupcakes, bake for about 15-20 minutes. Cupcake is done when toothpick inserted in center comes out clean. Cool completely before frosting.
