Black Bean Quinoa Casserole

Quinoa Black Bean Casserole (serves 8)

Calories: 255.9   Fat: 4.3 g   Protein: 15.4 g   Carbs: 40.7 g   Fiber: 9.6 g

Ingredients:

1 cup cooked organic quinoa

3 cups cooked black beans (or 2 15-oz cans, drained/rinsed)

2 large shredded sweet potatoes

1 cup shredded low fat cheddar cheese

1 tbsp cumin

Small pinches salt & pepper

2 eggs

1 cup diced tomatoes

Directions:

  1. Mix the quinoa and the eggs first together in a large mixing bowl. Then add the rest of the ingredients into the bowl and mix very well.
  2. Pour into a prepared casserole dish.
  3. Bake at 375 degrees for 25-35 minutes.
  4. serves 8!
