Quinoa Black Bean Casserole (serves 8)

1 cup cooked organic quinoa
3 cups cooked black beans (or 2 15-oz cans, drained/rinsed)
2 large shredded sweet potatoes
1 cup shredded low fat cheddar cheese
1 tbsp cumin
Small pinches salt & pepper
1 cup diced tomatoes
- Mix the quinoa and the eggs first together in a large mixing bowl. Then add the rest of the ingredients into the bowl and mix very well.
- Pour into a prepared casserole dish.
- Bake at 375 degrees for 25-35 minutes.
