I love appetizers and finger foods, but they are usually the part of the meal that is loaded with carbs.
I concocted this recipe with the concept of instead of bread, that maybe bread crumbs could do the trick. It was very tasty and I would definitely try this one again.
Bread-less Bruschetta Appetizer
1 large organic tomato, cut into fourths horizontally
1/4 cup freshly grated Parmesan cheese
1/4 cup bread crumbs
2 cloves of garlic, minced
1 tbsp oregano
pinch of freshly ground pepper
1-2 teaspoons extra-virgin olive oil
1.Preheat oven to 425° F.
2. Mix the bread crumbs and Parmesan together.
3. Place the tomatoes on a baking sheet.
Top with garlic followed by Parmesan/bread crumbs mixture, pepper and oregano. Drizzle with oil and bake until the tomatoes are tender, about 10 minutes.
Take them out of the oven and let them cool. Best served warm.
