16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used Steam Fresh Broccoli Cuts)
1 1/2 cup of grated cheese (I used a mix of cheddar and mozzerella)
2 egg whites
salt & pepper to taste
1 cup of seasoned breadcrumbs
1. Mix all the ingredients together in a large bowl.
2. Spray a cupcake pan, and place the mix into each individual spot and fill to the top.
