Banana Bread Baked Oatmeal

This Banana Bread recipe has just 7 ingredients and is so easy to make. We usually make it the night before and then let it chill in the fridge before slicing in the morning – that way you can either heat it up or eat it chilled, depending on what you prefer. The recipe is quick, sugar free, low fat, and clean eating friendly. The oatmeal will stay fresh in the fridge for 2-3 days and freezes perfectly.


3 large bananas (about 1 1/2 cups mashed banana)
1 cup almod milk
1 egg white
2 tsp vanilla
1 1/2 cup old-fashioned oats
1/2 tsp baking powder 
1/2 tsp baking soda
~1/4 cup honey/maple syrup/sugar if you like things sweet
(optional.) Mix-ins: I did half blueberries and half dark chocolate chips
  1. Preheat oven to 180°C/350°F
  2. Spray a 8×8″ baking dish
  3. Mash your bananas and add in your egg white, milk and vanilla.
  4. Add in your dry ingredients and stir to combine.
  5. Leave to soak for about 15 minutes.
  6. Pour your oatmeal into your baking dish and bake for 30-45 minutes or until cooked through and golden on top.
  7. Either serve immediately or leave to cool before slicing.
