Greek Yogurt Egg Salad Recipe

Ever since I discovered Greek yogurt, I’ve been a bit obsessed with it. I’m finding so many ways to use it.

INGREDIENTS

  • 6 large boiled eggs
  • 2/3 cup plain Greek yogurt
  • Kosher salt and freshly ground black pepper, to taste
  • 1 avocado mixed
  • 1/2 tsp mustard, to taste

DIRECTIONS

  • In a large bowl, roughly mash eggs with Greek yogurt, salt and pepper, avocado, and mustard to taste.
  • Serve on sandwiches or even as a dip.
