Ever since I discovered Greek yogurt, I’ve been a bit obsessed with it. I’m finding so many ways to use it.
- 6 large boiled eggs
- 2/3 cup plain Greek yogurt
- Kosher salt and freshly ground black pepper, to taste
- 1 avocado mixed
- 1/2 tsp mustard, to taste
- In a large bowl, roughly mash eggs with Greek yogurt, salt and pepper, avocado, and mustard to taste.
- Serve on sandwiches or even as a dip.
